Baba Ghanouge
This is an aubergine dip.Also know as " Mtabal "  
It is a particular favourite of mine.It is eaten all over the Middle East.  
Ingredients:
3 large aubergines
1 juice of a lemon
3 table, spoons of yoghurt
2 tablespoons of tahini
3 crushed cloves of garlic
salt, olive oil and garnish
(serves 4-6 people)
Method:Grill the washed aubergines in a grill but remember to prick the skin first.  
Grill the skin till almost charred and there is a hollow sound when tapped.  
Cut and take the pith out, put this in a bowl, discard any seeds.  
Add the yoghurt, lemon juice, garlic and tahini and mix with a fork.  
Add salt to taste. Put on a serving dish, make a well and put olive oil in  
the well, garnish with radishes or tomatoes.
